We kicked off January with a great activity centered around the friendliest fruit of them all...the pineapple.
A pineapple is most commonly associated with hospitality, welcome, and good luck; its spiky exterior representing protection while the sweet fruit inside signifies warmth and generosity, often symbolizing the 'sweetness' of a welcoming home or community.
Historically, pineapples were rare and expensive to import, making them a symbol of wealth and high social standing.
In many cultures, the pineapple is considered a bringer of good fortune.

Be proud of being an LDS woman
Be courageous in decisions, not compromising principles, not violating spiritual values, and not shrinking from responsibility.
Be organized and well prepared.

Hawaiian Haystacks were the main course for lunch followed by a refreshing scoop of pineapple sherbet for dessert.

Yolie's daughter, Michelle demonstrated how easy it is to make Catalina Chicken in the crockpot. Recipe above.
A crockpot liner is used to reduce the mess of cleaning stuck on food from the crockpot after dinner.
Add a bottle of Catalina salad dressing...
One dry package of Lipton Onion Soup...
One jar of apricot preserves...
diced chicken...
and lastly pineapple.
Give it a stir and cook as directed.
A simple and delicious meal served with rice.
Michelle shared several kitchen tips she discovered to make use of excess products that can be frozen and used when you need a small portion.
And containers found on Amazon to freeze in single serve portions.

Did you know that guacamole can be frozen?
Below are ice cream scoop sizes of guacamole that are still frozen and have retained their green color.
We had drawings for a couple of Michelle's single serve items.

Linda was excited to pull her name for the second t-shirt given out.
